If there is one material that truly captures the heritage of the Laguiole knife, it is the horn of the Aubrac Cow. Choosing this material is not just an aesthetic decision, it is a tribute to the Aubrac plateau itself. This handle creates a direct link between the tool and the rugged, volcanic landscape where the knife was born.
Visually, Aubrac horn is mesmerising. It possesses a unique, slightly see-through quality—a ghostly translucency that allows light to penetrate the surface and reveal the depth of the grain within. The colours are a swirl of natural artistry, ranging from deep charcoal greys and blacks to milky whites and soft creams. Unlike other materials that are rounded or heavily polished, the surface of this handle is deliberately kept flat. This shaping technique preserves the integrity of the material, showcasing the original surface and raw character of the horn rather than hiding it.
Where can it be found? This horn is sourced exclusively from the Aubrac breed, a cow native to the Massif Central region of France. Recognisable by their tan coats and lyre-shaped horns, these animals are the icons of the local countryside.
Where else is it used? The Aubrac cow is celebrated for more than just its horn. The rich, fatty milk produced by these cows is the essential ingredient in Laguiole, the region's famous AOC (protected designation of origin) cheese. Historically, the horn was also heated and pressed to make combs, spectacle frames, and drinking cups due to its thermoform able nature.
Did you know? Horn is made of keratin, the same protein found in human hair and fingernails. Because it is a natural thermoplastic, it becomes soft and malleable when heated. This allows craftsmen to shape the handle precisely without cutting the fibers, resulting in a material that is incredibly tough and resistant to impact, despite its elegant, glassy appearance.
